more cooking fun
This is what we made for dinner tonight, because we realised that we were going to get scurvy unless we started eating more vegies.
* First make the shortbread dough - I'm not sure about this part, the housemate did it. Basically you stick wholemeal flour in the blender, and add butter, whizzing as you go, until it forms a crumbly dough. Tip it out onto some gladwrap (clingfilm? americans? uh?) and roll into a ball, wrap tightly and put in the fridge for as long as you can be stuffed (15 mins, in our case).
* Roll it out on a floured surface until it's a large enough circle to fit over your pie dish (quantities and thickness will vary depending on how big a quiche you want, we just sort of made it up). Refidgerate for a bit longer, and then bake for 7-9 minutes at about 180 degrees celcius.
* While it's in the fridge/oven, chop up whatever vegies you can find. We used one geriatric zuccini, two large tomatoes, an onion, and lots of fresh basil. Take out the pastryshell, arrange all vegies except tomato and basil on the bottom, and pour over enough quiche mix (1 egg to every half cup of milk) to cover them. Sprinkle over a cup or so of grated cheese.
* Put sliced tomato and basil leaves over the top of it, making sure you poke the basil leaves down into the egg so that they don't burn. Stick it into the oven for about half an hour, or until the egg is goldy-brown on top and set all the way through when you poke it with a fork.
Uh...yeah. Cooking is such an exact science with us, as you can see. But it tastes good!
Well, today I cooked and cleaned and shopped and went to my lectures and my bio lab and did homework and HATED THE UNI WIRELESS SYSTEM OH SO BAD. I am so ready for this week to end. Bring on my Friday, world.
