On the laksa and roti canai: it is actually possible that you could! A lot of small towns on the north coast do have Thai restaurants and also the North Coast has quite a big Indian (Sikh, mostly, afaik) population so you could totally find an Indian restaurant as well. Don't know if they'd have roti, probably, but they definitely exist.

My google-fu is weak on the subject of restaurants in Maclean but there's definitely a Thai restaurant in Yamba, probably one in Grafton as well. Yamba's a good bet because it's a tourist town. All this is assuming that you can get to any of these places, sorry about that.
